Green peas are used as a filling in different recipes (samosas, fluffy kachoris - a type of stuffed bread, etc). The recipe given here is a filling used for kachoris but can also be used in instances calling for a similar filling. Adjust spice (specified in the freshly ground bhaja masala mix below) and heat to your liking.
Motorshuti/ Peas - 100 g
Ginger - 1 inch
*Jeera and Shukno Lonka Bhaja Masala (roasted spice mix) - 1 tbsp
Salt - To taste
White Oil - as indicated
*Bhaja masala (roasted spice mix):
Roast 2 tbsp jeera (cumin seeds) and 6 shukno lonka (dry red chillies) on low heat till jeera turns brown and the chillies dark red. Do not char.
Remove from heat and grind to a fine consistency (use a coffee grinder).
May be preserved in a tightly capped glass jar for a long period and used for different preparations.
Grind motorshuti/peas and ginger with a little water into a paste. Add as little water as possible as the peas have a high moisture content.
Heat 1 tbsp oil in a kadhai.
Add the motorshuti and ginger paste and stir on low heat till dry.
Then add in the salt and Bhaja masala.
Mix well and remove from heat.
